Chances At UC, Rice, NYU, UF,Vanderbilt, etc

*I was told to post my question again and be more specific~so here it goes

I Will be a Junior this Year and I know its kind of early to be posting a "Chances" thread but I want to know what I can expect. I don't want to shoot for a college that is too far-fetched or that I am "over-qualified" for. So, some of my stats will be "predictions" based on my past performances.

Here Are My Stats:
Standardized Test Scores~

GPA: I'm pretty sure by the end of Junior Year it will be an UW:3.5 and a W:4.2
PSAT (Sophomore): 225
SAT: Haven't taken but I'm guessing I'll probably get around a 2050-2200
SAT II:Took French (740), will take Physics, Math, and US History Next Year (aiming for a 690-780)
ACT: Don't know if I will take but If I do maybe a 32
AP Exams: (Taken 4 So far)
AP Biology (2)~Freshman Year was difficult~Won't submit score
AP French (5)~Sophomore Year
AP Human Geography (5)~Sophomore Year
AP World History (4)~Sophomore Year

Extracurriculars:
*I love to write, especially narratives, short stories, etc, so most of my extracurricular activities exemplify that.
VP of Writing Club
Treasurer of Book Club
Secretary of French Club
Link Crew Leader (freshman orientation group)
Writing a book (hopefully get published in a year)
Debate Club (officer)
Took Summer Courses for writing at UF
Took a Summer Course for Writing at a Program called Inner Spark~California State Summer Course
Still Plan on doing more Junior Year

Awards and Achievements:
National Merit Scholar (Once I take my PSAT again)
National Achievement Scholar
Won Creative Writing Contest for my Narratives
Debate Awards
AP Scholar

Volunteering:
Volunteered at a Local Hospital over the Summer(150+)
Volunteering at library (55 hrs so far)

I'm not sure what I want to major in~maybe Creative Writing, English, NeuroBiology, Undecided. I like a lot of options.

Universities That I am Considering (from safe to reach):
UF (In-State--give Scholarships)
Howard University (HBCU~I'm Black btw)
University of California
Rice University
Syracuse University
Vanderbilt
Kings College
NYU
John Hopkins
Duke
Stanford
Any of the Lower Ivies (It never hurts to try~maybe Dartmouth or Cornell)

Any Suggestions would be greatly appreciated

As a rising junior with no SAT or ACT score yet, you make it very difficult for others to chance you.
