I'm a Junior at a pretty competitive high school in Southern CAlifornia,
I want to apply to CAl Poly San Luis opispo, UCSB, UCSD, UCLA, UC Berkley. Here are my stats so far:

Weighted GPA 4.4
class rank: top 8% out of 650ish
SAT's: expecting around 1320 but probably higher by the end of the year.
AP's I will have taken by end of senior year:
AP World History- took it last year, but got a bad score
AP US History
AP Spanish
AP English
AP Biology

EC's:
Clubs- Interact club and Art club- both four years, MESA club- 2 years, NHS/CSF - 4 years

Lots of community service, by the end of the year probably 350+ hours total, at summer camps and animal shelter.

And I've taken lots of art classes, but I don't know if I can count that as an EC.

You can do it two ways: raise your SAT slightly higher or score well on the APs (preferably majority of 5s so even if you dont get in your reaches, you can appeal on the basis of strong APs score which is more indicative of your strengths as student vs test-taker).

Caro, I fully agree with GradStudent's comments, which are excellent.

In addition, I'd like to suggest that you prepare yourself hard enough to get good SAT II scores. Then, you will be in right track for your college.

CPSLO: Safety-Match
UCB: Match (get the SAT score slightly higher)
UCLA: Match
UCSD: Match (a friend of mine last year got in with very similar stats to yours, just slightly lower on the SAT)
UCSB: Safety-Match

No "real" conclusions can be drawn until your SAT II scores are factored in.
