Getting in to a school for engineering is very hard- it would depend heavily on your grades in math and hard science courses. ACT score is impressive for sure. IMO, SAT subject tests should be above 700 for intended engineering majors if you want to have a good shot.
I wouldn’t worry about the fact that you have music extracurriculars, because it is clearly something you are passionate about.
Brown, Georgia Tech, and Carnegie Mellon will be more reach schools, and other than that you seem to have a good mix of match and safety.

Brown- Reach

Rice- Reach

Carnegie Mellon- Low reach

Georgia Tech- Low reach

UIUC- Safety

Kansas State- Safety

Iowa State- Safety

Minnesota-Twin Cities- Match

Kentucky- Safety

Pitt- Safety

Alabama- Safety

UT-Austin- Match

University of Florida- Safety

Get some more matches in there, but you look great!

Both Brown and Rice look like low reaches to me.
