Chances for UC? Worried T_T

I'll be applying to UC Davis, UC Irvine, UC Riverside, UC Santa Cruz, and maybe UC Santa Barbara. I feel like UCs are a long shot with my type of grades and test scores ...)

GPA: 3.81

SAT I: 1510 (score is not so great when i took it the first time. i'm taking it again this December in hopes of getting at least a 1700 or higher.)

ACT: 23

Extracurricular:
-Treasurer of Math Club/ member since sophomore year
-Secretary of French Club since sophomore year
-Member of Midnight Judge (newspaper at my high school, contributed art pieces to post up)
-Volleyball (JV freshman-sophomore year, Varsity in my senior year. didnt do it junior year but i regretted it badly)
-Member of National Honors Society
-Volunteered in a convalescent center in my neighborhood
Have been involved in AIDS Walk since sophomore year

I'm worried because my SAT score is really weak and i keep thinking that i wouldn't be able to get into a UC because of that. I'm really aiming for UC Davis though. Is it a long shot?
And if anyone can help me edit my personal statement please PM me! Thanks a bunch!

I think you know where you stand. No reason not to try but, your chances of making it into any UC other than Merced aren’t very good.

Apply to a few CSUs as safeties. Long Beach, Pomona and Chico are all good schools and within your reach.

UCSB: reach
UCD: reach
UCI: reach
UCSC: low reach
UCR: high match
