Are you in state and what is your intended major?

You should specify what you plan on majoring in. The engineering school’s acceptance rate is lower compared to the other schools.

Even some majors in LAS are super competitive too.

My intended major is chemistry. I am taking three advanced college classes in chemistry now and I received a 5 on my AP test in chemistry. One of my two recommendations was from my chemistry teacher and I would rate it 10/10. Also, my essays with be on chemistry. I hope these things will help.

Also, I will be doing research with a professor at Portland State University

Your GPA is a bit low. I think your SAT should be okay for LAS except for those more competitive majors. I am not sure how competitive is their Chemistry major, while their ChemE in LAS is very competitive and it would be a reach for you. Chemistry may be high match to low reach.

Will my college classes and my work in a chem lab help?
