I know the UCs are nearly impossible for international students, but I was still wondering if I stood a chance. Is it worth the extra application?

“Nearly impossible” would be an exaggeration… Nearly impossible would be the Ivy Leagues, MIT, Caltech, etc.
I think it’s just like trying to get in OOS but a little bit harder. I went to two international schools in my life and one was very competitive while the other wasn’t. About 25% of my classmates in the competitive school that actually applied to UCLA got in, while less people got into Berkeley. At the less competitive one, no one got in because there were very few students who applied.

wow josh. your stats are impressive.
I was in your shoes just a year ago- I got into UCLA as an international student with an SAT score of 2200.
It is definately much harder for an international student to get in to UCLA, but with luck, you will get in. In fact, I think you can even shoot for higher- the Ivy leagues?

I too had to suffer through IB and all the crap that comes with it (TOK EE CAS) but the best part is that you can bomb your IB exams and still go to college. What really matters is your predicted IB grade. (I did far worse in my actual exams than what my teachers predicted I would get, but it didn’t matter:) )
