Chances of me getting into Stanford?

I am applying for the Stanford class of 2020 and was wondering what my chances of getting in are. I am applying from New Zealand but live in the UK at the moment.
SAT: 2160 (740 math 700 critical reading and 720 writing)
SAT II: Did not sit.
International Baccalaureate: 45 points.
GPA: 4.0
ECs:
Professional windsurfer. Sponsored rider for multiple windsurf companies and 3 podium finishes on the American Windsurfing Tour.
Play on my cricket team which won a national championship last year.
Founded my own political debating society at school which helped organise local politicians to come and debate at school.
Run my Amnesty International society and have run multiple events for them.
Worked in the Houses of Parliament for the Scottish National Party for 2 summers.
Designed Financial Structured Products as part of my summer work with Stable Rd Partners, a small fund management company.
Policy Director for my school MUN.
Head of Student body for my school.
2 Harvard Summer Schools, earned 8 under grad credits.
Captain of Rugby at school and played county Rugby till Sophomore year.
Selected to work on the Hilary Clinton Campaign next summer as part of a UK initiative to bring US political campaign experiences back to the UK. Only high school kid selected.
Volunteer down at my local Alpaca farm and help care for them.

Putting aside essays, I have to say 45 IB and ECs are pretty good.

However, I am afraid that not taking SAT 2 may make you less competitive than other Int applicants. While SAT 2 are not required they are recommended, and most international kids will have them.

If Stanford has a windsurfing team, you’re in

(I don’t know if it will help you specifically, but Stanford in general often looks kindly on athletes with good grades.)
