What do you think my chances are at Barnard, Claremont McKenna, USC, Berkeley, UCLA, UCSD, & UCI??

But other than SAT scores, is it still a reach?
And since I'm retaking the SAT I, the score will probably be higher (:
Oh yeah, planning to be an Econ major.

I don't know if that's your entire list or not, but if so, make SURE to add at least one more true safety that you really think you could tolerate. UCSD seems like a match, but not an exceptionally safe one, while UCI is closer to a safety but not unreasonably so. Everything else is some degree of a reach given your test scores on both SATI and SATII. Schools that take the highest combined SATI will get a better picture of you, but still not anything that will blow you out of the water compared to other applicants, especially given that none of your SATIIs are exceptional. The trouble to me is that you are, inarguably, a good student across the board, but there's nothing in your application (as you've presented the material to us) that particularly makes you stand out from the crowd. For this reason, I find your odds a bit harder than normal to predict.

Well, by looking at your things, im sure that you will get into at least 3 of those colleges. With your EC's history, im sure they will see that you have a lot of potential as a student at their school. Good luck!
