I plan on majoring in psychology and following a pre med track with hopes of one day being a psychiatrist!

hmm… you have a very challenging curriculum, but your AP SAT scores are not the best.
On the other hand, your ECs are quite good, although nothing extraordinary tht will guarantee you a place in top colleges. On the other hand, you are a URM, which is a great hook!

Cornell - reach
Brown - low reach
Duke - low reach/match (match because URM)
Rice - match
Berkeley - match - low reach
UT - in
UNC - no clue

You are an URM and you have great extra-curricular, but your test scores might bring you down. I would say your matches would be Duke, Rice. I’m sure you will get into UT automatically. Brown, Cornell, and Berkley might be reaches, but your minority status might help. A friend of mine is a first generation Hispanic and got into Brown and Duke with a 1900 on the SAT. Of course, she had good essays and interviews though. It all comes down to the other components of your application. Good luck!
