Currently a BS Math-Actuarial Science major, wanted to change to something else because I realized I don't have a lot of interest in the actuarial science field.

If I did BS Applied Math, I will still graduate a semester early as I originally planned

If I double majored BA Econ (my school doesn't offer a BS Econ) and BA Math, I'll graduate a semester later (so on time).

I really have no idea what to do, can anyone offer any insight?

I was in the same boat as you, I switched majors a few times and finally settled for Applied Math specializing in Computing (had to pick this one to still graduate in 4 years after switching so much).

You have quite a few options if you go the applied math route. The defense sector seems to love applied math majors (systems engineering, integration and test engineers, computer system architects). If you supplement it with a few programming classes you can easily break into the software field (that’s what I did). Plus you still have the math background to get any of the other math jobs you are aware of (actuary, statitician, data analyst, etc).

This should help give you a better overall understanding of your options:
