Some calculations in practice tests I've seen involve multiplication and/or division of numbers with as many as 4 digits. Are we expected to make all of these without calculators, or do those not appear on the test?

just estimate!
but usually, you shouldn't see those calculations on the test

From collegeboard.com :

The Chemistry test consists of 85 questions, and is scored between 200 to 800. The use of a calculator is not permitted. ** Numerical calculations are limited to simple arithmetic. ** A periodic table indicating the atomic numbers and masses of elements is provided for all test administrations.
