I make this every year.
For cookie exchanges, I sometimes make chocolate covered pretzel logs rolled in christmas theme sprinkles. Super easy, just temper some good quality semi-sweet chocolate, dip and roll. Sweet and salty.
I discovered this recipe last year and it was a big hit! Can’t wait to make a batch.
We also do iced sugar cookies every year but this recipe has also made the rotation the last few years:

I love this cookie. (Granted I didn’t use brandy in mine but vanilla.)
Those Christmas Crack chocolate/caramel/saltine concoctions are fun. You can put red and green M&Ms on, for example.
In terms of baking I find myself more happy to do bars instead of cookies - I think it feels faster! 7 Layer Bars for instance. Lemon bars.
To be honest I think lemon bars are my most favorite .
Another easy but really very good one is to use the Betty Crocker gingerbread cookie mix. We make balls, roll them in sugar, flatten slightly and bake. When cook we make a good vanilla buttercream and pipe some on each cookie.
We always make a sour cream cookie. It looks like a sugar cookie at first glance, but is much better.
I used to bring the classic decorated, iced, sugar cookies (which I enjoy) to cookie exchanges, when another participant looked and me and said I was too generous to bring something that took so much time. Hmmmm. Future cookie exchanges: chocolate dipped apricots, easy fudge or other bar cookies. Much easier and just as delicious.
I organized a cookie exchange for about 15 years at my work. When everyone started to make bar cookies, brownies, etc, we decided to stop doing it. The whole point was to have special cookies for the holiday.
I do like these things…but you know what I mean!

Me too. Nothing like great Christmas cookie recipes!!
I can understand this if someone is doing Basic brownies from a mix….but bar cookies are often just the same ingredients as a cookie - just not round!
I make baklava…it’s technically a bar….takes plenty of time and tastes amazing than many cookies!
I will agree though that it it’s not unusual to have one person took over a complicated cookie and another to make box brownies and call it a day!

I also make a mean baklava. I dislike the coworker cookie exchanges that are intensely dyed colored cookies, often from a box. They taste gross. It doesn’t take too much more time to just do it homemade.
Baklava is delicious…and very time consuming to make! But so are most of the special Christmas cookies.
I also like those candy cane shaped cookies from the Betty Crocker cookbook. They are a PITA to make!
