<p>Also I will be doing at internship at the NY DOH (hopefully) and I have a position in my dad's company, and bharatnatyam (a dance) and soccer and maybe tennis and the tabla (an instrument) ---> that should be enough to get me into Stanford (I hope, I really hope...:eek:)</p>

I know that you have issues with your parents about retaking it but don't give up now!! Most of the people can improve their results (I hope I can too) and since you did very well on the practice tests I'm sure you can do so as well.
Maybe you should try another approach for your SAT practice?
