I will be graduating high school in 2019 and am wondering if schools will accept the Old SAT by that time (I am already scoring so well on the old SAT and don’t want to prepare for a new format).

What score is “scoring so well”?
You must be a freshman now. IIRC, the new SAT debuts this spring. So if you’ve officially taken it, you must have done it either the first semester of your freshman year or in middle school.
Whether or not colleges will accept it is less important that the fact that you don’t want to be peaking this early. You’re not applying to college as a freshman; you’re applying as a senior. They want to see work that is demonstrative of your current ability, not your 2015 ability.
And please try to enjoy high school and not stress over college admissions. There’s plenty of time for that later. Seriously, enjoy this while you can.
The colleges are still deciding if/when a cutoff for the old SAT will happen. Just stay tuned.
Some wont even accept the old sat for class of 2018 so i wouldnt spend time on the old one. Most colleges have not made a decision for your grade but i wouldnt risk it. Just study for the new one. I know its kinda hard atm since theres not a whole lot of material to study but you are a freshman and have more than ample time to prepare and i assume more material will be availible next year.
