I was originally on the waiting list for a CS 61A lab/discussion that was from 2:00-3:30, and I got off the waiting list and into the 2:00-3:30 class. But my class got changed today to 6:30-8:00 PM and I don't really want that late of a class - the 2:00-3:30 is full now.

Does anyone know if I can get that class back? or am I doomed to a really late class?

Keep checking Telebears to see if you can switch back.. spots are bound to open up as people drop. You can also ask your GSI about changing into another discussion and lab in the first week.

In any case, 61A discussions and labs don't take attendance, so you're not required to attend any of them. The labs aren't worth any points anyways. You could do the labs at home on your own time if you want, though you might be missing out on help from your GSI and the opportunity to work with fellow students. You can also try to sit in on other discussion and lab sections even though you're not registered in them. It depends on the specific GSI if they're ok with it, but you can check with him.
