You might be better off doing a 1 year program at a recognized/well-regarded university. If you know some coding then this is very doable. Here is an example:
I know many non-STEM majors that pivoted but most learned some coding on their own and few got certifications too. A lot of HS kids around here are doing AWS and Google cloud certifications using online materials.
Another option is to learn a specialized software/language like R or SAS and focus on applications.
