So I know I'm not exactly talking about dual credit, but more like the actual college classes. Is a HS student allowed to take beginner (in the 100s) classes, but not necessarily, if possible, get HS credit?

You could just not tell your high school you're taking college courses, if you don't want any credit. (I did that with abstract algebra. Apparently, any college course that isn't something like "Inventive Problem Solving" or "Nanotechnology" was weighted honors instead of AP at my high school, so even if I'd gotten an A in the class, it would've brought down my GPA.).

But what if I wanted college credit for it, but not HS credit?

If you take a course at a college, you'll get credit from the college - they won't ask you to do special paperwork or anything, and they don't care whether or not your high school is also giving you credit.

I took a college course at the state university over the summer and my high school has no idea about it. You do not have to tell your high school.

Another question. If, lets say, you take enough couses to finish your freshman year of college. After you graduate HS, would you be considered freshman or sophmore?

^^That depends on the college you end up going to. Different colleges treat transfer credits in different ways.
