Can I take a subject as my major (say,Economics) which I have never studied in my school life ( i.e.) till 12th grade ?

Yes you can and you can change it at anytime. Just pick what you want.
Most college majors are things you can’t study in high school. It’s not expected that you have previous experience with it.
