How hard are the science and math requirements for humanities majors (in the College)? I hate science and I'm not great at math. What are the easiest ways to fulfill these requirements? And should I try to finish them as soon as possible?

They are not hard.

Take a look at the classes that fulfill the requirements:
Physical World: http://fission.sas.upenn.edu/col/genreq/results.php?req[]=P&cls=10
Living World: http://fission.sas.upenn.edu/col/genreq/results.php?req[]=L&cls=10
Natural Sciences and Mathematics: http://fission.sas.upenn.edu/col/genreq/results.php?req[]=N&req[]=B&cls=10

Avoid the intro Bio, Chem, Physics, and BBB courses, and the other courses should not be too bad. Check course difficulty on Penn Course Review.

Check if courses fulfill multiple requirements. That is always handy.

Yes, definitely try to finish requirements as soon as possible. This way you can be sure you are majoring in what you are interested in. Although, if you are majoring in something difficult, you can spread out your requirements to make each semester slightly easier, instead of lumping difficult major classes and easy requirement classes in separate years.

The one requirement you should fulfill definitely freshman year is Writing Seminar.
