Thoughts? How are the job prospects? Preferred over plain old Comp Sci/EE?

If your reasons for choosing Spanish as a minor are to improve your job prospects as a computer science professional then I think that you would be disappointed. At the higher levels computer science jobs are mostly about technical competence and the ability to work well in teams and successfully develop great products. The profession is international in nature, and talented engineers are drawn from colleges across the world. To a large extent “English” is the language of day to day communication.

That said, if you have a passion to continue to develop your Spanish language skills then I would encourage you to pursue that route. While there are positions for which EE or other engineering skills are important to a computer science position these are the exceptions. What will matters most when you apply for your first job are your core computer science skills and analytic ability. In effect any “minor” is fine.

Thanks! Very helpful :)
