my teacher gave back a rec for me to mail yesterday and i just realized she didn't sign on the seal... so today i asked my college counselor's assistant about this and she was like oh i'll sign it. there just needs to be some signature on the seal.... but then couldnt i have just made my friend sign on the seal or something??
i'm a bit confused..

Well no, your friend couldn’t have signed it… I don’t think the counselor’s assistant was allowed to either… :x

You could have taken the letter out, read it, and put it into a new envelope, so I think that’s why the teachers who wrote it have to sign it.

I don’t think it makes much difference now though

I don’t think my sons teachers signed any seal on the envelope. We gave them regular envelopes and stamps and they went the letters themselves. I suppose if the schools are concerned, they will call the teacher to find out if they wrote it.
I think you will be fine either way.
