Continue my Summer Job next year?

So this summer, I had a job with a (big) company that I would gladly work with once I graduate as an EE from university.

My boss really likes me, and on several occasions, he has asked me to come back next year. The problem why I am a bit hesitant is because this job doesn't involve engineering/designing. I'm mostly doing some inspections and etc. on equipments and sometimes shadowing the linesmen when they work.

I would gladly come back next year and really like the work environment, but the only thing I'm dwelling on is that I'm not exactly doing engineering work (I just finished first year, so I doubt I could have done any this year anyway).

So basically, would future employers care that my summer jobs weren't exactly engineering jobs/internships? The best solution for me would be to apply to these engineering internships with the company next summer, but if I got a job, I would still feel very bad about turning my current job down.

If you don’t like it, quit.

I like it and it’s with a company I will want to work with, but this position doesn’t really have much to do with engineering, so I’m wondering what I should do. Ex. Come back next summer because my boss really likes me for a great reference later on?

Are you sure they’re going to bring you back into the exact same role? In big companies, it’s common to move departments from semester to semester. They might have put you in the least “engineering” of their available positions because of your year in school.
