Cooking when you’re Staying home

@ChoatieMom I’ve been avoiding AJs since they don’t do curbside. So I guess I’ll stick with online sources for now.

I’m back to report that the apple cider donuts are outstanding. I always follow a recipe to the letter the first time, and I wouldn’t change a thing. These are very sweet, which is how we like them.

^^^ I made the apple cider donuts and it was a shape fail!!! Now, maybe I wasn’t good enough with my measurements - I was only making half the recipe since I have just one 6 count donut pan. They were just too light - cakelike - but would not hold their shape to come out of the pan well. I had a couple stay whole, a couple lose their top and a couple turn into basically crumbs! I still coated them and will eat them but no condition to share them!

Flavor is good.

It’s possible ingredient ratios were the problem, @abasket, as halving a recipe doesn’t always mean halving each ingredient. These are so tasty, I think it might be worth trying again making the whole recipe and just baking six at time. I followed the recipe meticulously, and the donuts shook loose easily and were firm and perfectly shaped.

Chicken tortilla soup last night on a cold, rainy San Diego Sunday. We also decorated fall sugar cookies with both adult Ds who love to do this as does H. A perfect weekend.

We also had a cold windy day. I made chocolate chip cookies from a new recipe. It was a recipe for just 6 cookies which was just right for two of us. It used cut up semi sweet chocolate bars instead of chips. They were a cake like cookie which I like. My H prefers a crisp thin cookie but he enjoyed them, (Or annoying he enjoyed his one cookie) he is incredibly disciplined eater. I had three and sent the remaining to my D. I made a red lentil dal last night from The NY Times cooking site. It fit the cold weather. I will have leftovers for lunch, sent some leftovers for my D for her lunch. My H eats on the go after volleyball so he made his unconventional lunch of lentils in a flour tortilla.
Tonight I’m going to cook some cranberry beans and make a Mexican quinoa bean bowl.

I have ground lamb that I need to use–other than lamb patties, I have no idea what to do with the meat. Anyone have a more interesting suggestion for ground lamb?

How about a ground lamb “bowl”? Season the lamb, pick a grain for the bowl, add some veggies or pickled veggies, cucumber, feta, tomato, and a spiced yogurt sauce???

Or a lamb meatball - again served with spiced yogurt sauce or hummus???

Shepherds Pie.

Meatless Monday. I did a new spaghetti squash recipe. Stuffed with a mushroom/kale/marinara sauce and topped with cheese. It was very good but while the serving size was listed as half a spaghetti squash, I could only eat half of a half.

Any ideas for puff pastry. I don’t know what I was thinking when I was at Trader Joe’s, I bought three boxes. The woman next to me said it’s hard to find so I scooped it up. The laugh is I don’t even use puff pastry. Give me some ideas. Thanks

Hi - just used my puff pastry last night for apple turnovers. I cooked 3 apples (sliced, cored, peeled) on the stovetop with a pat of butter, brown sugar, a pinch salt, cinnamon, a little flour - cooked til soft. Puff pastry thawed and rolled out thin. Filled a square with the apple mixture and fold over to form triangle. Use fork to secure sides. Make a hole with fork in top and brush with egg wash. Bake 425 for about 13-15 minutes or until golden brown. We served them with vanilla ice cream, but you could just use powdered sugar or a confectioner sugar glaze (CS and milk).

We also have just cut the puff pastry into squares and bake. Then pull them apart and fill with sliced strawberries and homemade whipped cream. Top with powdered sugar and drizzle of melted chocolate.

Also - on Tasty.com there is a Fruit and Cream Cheese Breakfast Pastry recipe that we’ve done for Christmas time breakfast. They come out beautiful. There really are SO many things you can do with puff pastry - I don’t blame you for grabbing three boxes!!

Wrap around brie and bake - top with a cranberry/pistachio sauce/topping.

Unroll on baking sheet top with roasted vegetables, cheese and bake until cheese is melty.

If you don’t want sweets - Use puff pastry to top a crustless chicken pot pie. We occasionally use ground lamb in chili. Just pick your favorite recipe and substitute the ground lamb for whatever meat it calls for.
