Can I major in environmental sciences but still go to medical school? Does it cover the required science courses? I couldn't find this information on the website and other colleges usually have this bit of information.

You can major in anything and go to med school (as well as law school). I know a girl who majored in Econ at Cornell and took the required pre-med courses and now she’s in med school. The pre-med requirements from my knowledge are only 6 courses that are universal for all US colleges. They are Chem, Bio, Orgo, Physics, Calculus, and English (Freshman Writing Seminar).
