Does the Cornell Contact Meeting affect our applications in any way? Is it necessary to attend such a meeting?

The contact will indicate in his/her report that you don’t want to meet with him/her so that COULD show that you are not as interested in Cornell as you say you are in your essays.
I think you should at least have a phone call meeting like I did because I was very busy around that time too. It should take around 30 minutes or more depending on the number of questions asked by you and your contact.
You should make every effort to attend or reschedule. “Yield” is important to colleges & anything you do that leads them to question how interested you are in attending can not help your chances.
