This might be a little late, I’m sorry to have stumbled upon it so late in the game, however as I applied (successfully) last year to Cornell Engineering let me tell you from my experience:
In the “specific resources” part:
I would look online at the Cornell webpage and look up certain professors who are specifically into the kind of things you are interested in and discuss working with them in your essay
I also wrote about Cornell’s extensive co-op programs and research/internship opportunities.
In the interest in engineering part:
I really didn’t write anything particular. I just basically gushed about how much I loved Cornell and I how I thought engineering was the right job for me.
Note:
BUT I would also like to mention that my essay wasn’t that great and I had no real focus whilst writing the essay so I do not think it was a big reason for my acceptance. As long as you don’t make a crucial mistake (like sending in an essay about why you want to go to Columbia by mistake) you should be good!
