I also have taken honors math class this year as well as honors English my freshmen and sophomore year, and took AP this year. I also started a model United Nations club at my school, and will attend a elective state conference for girls interested in government.
I’d say your odds were a bit better than a coin flip, but only if you are very serious about going there.
Test scores are on the low end, as is the GPA.
If you really want to go, here is my best advice:

Take the ACT again. Test scores are a huge factor in admissions these days. Fortunately Baylor is one of the schools that “supersocres” your ACT. You can combine subscores from a variety of tests to earn a higher composite.

Apply Single Choice, Early Action. This does not bind you to going to Baylor, BUT you do have to affirm that you are not applying to other schools early action.

All the “optional” things on the application? They aren’t optional! Do them all! (Reference, short response questions,)

If you do 2-4 your odds go up dramatically.
If you also do 1 and improve your score a bit, you should be a slam dunk.
The rest of your resume is quite solid.
One last thought. I did not add this, because this is not something to “do.” I would never in a million years suggest someone “do” this for the reason of improving admissions chances at a college, but if you are active at your church, and particularly if it is a baptist church, that is a helpful thing to have on your Baylor resumé. If your pastor or youth pastor knows you well enough to write a letter of recommendation, it helps.
