Most of the schools I’m interested don’t offer Molecular Bio or Genetics itself as a major, and while Biochem is interesting, I’d rather take Bio then Biochem.
Most sites I’ve checked don’t include biology in the list of viable majors for a career in genetic engineering, but since all of this is underneath the umbrella of biology, could it work? Or would I be better off taking Biochem?
Biology would be fine. Regardless of your undergraduate major, you’ll need a graduate degree to do any significant work in the area. The focus of your graduate degree will be more important than your undergraduate major.
As long as you fulfill any necessary per-reqs you should be ok.
