My main interests is in Physics, Chemistry, and History, I was thinking that it would be really cool if I could get a joint degree in all 3 of them.
If I could, would it have to be Undergrad or Grad school?
If I can’t would I at least be able to dual major in Physics and Chemistry?

A triple major might be difficult. What about a major + 2 minors?
What about a major in Chemical Physics + a history major or minor?
Depending on your interests in history, you could combine a major in a physical science with a major in history of science.
As to your question about whether it would have to be undergrad or grad: To do a graduate degree in chemistry or physics, you would need an undergrad degree in that field. To do a graduate degree in history, you would need an undergrad degree in history (or, if interested in certain areas, a relevant major in a related field, e.g., an ancient or modern foreign language major to focus on the history of a region/country where that language is relevant). You perhaps could do an undergrad major in a physical science and a grad degree in history of science, if that was your interest.
Your California residency doesn’t matter unless you want to stay in California for college or to go to a public university there.
I would not recommend two degrees (much less three) unless you can complete them in 4 years. There is really no need to stay an extra year for a second degree.
I’m a major in Chem/Marketing. I’m using marketing as a complementary. Now Chemistry and History are two different majors are you planning to retire in one major? Or pursue them both as you graduate. What are your goals for those majors?
