how does SDSU look at course rigor? Is two AP classes enough?
Course rigor is determined by your CSU GPA and looking at your self-reported classes. There is no magic number, but the CSU GPA caps out with 8 semesters of UC approved Honors/AP/IB or DE course. If you want the maximum bang for you buck, take at least 4 AP classes 10-11th grade.
My school only offers two AP classes that I can take 10th and 11th grade. Would it be worth the time and money to take a couple more AP classes online?
Does your school offer UC approved Honors courses instead? You can take 2 Honors courses and 2 AP courses. UC approved Honors courses are listed for California HS’s only.
Taking AP classes on-line is possible, just make sure you are able to get copies of the on-line transcripts.
Also, if your school only offers 2 AP classes, you will not be expected to take courses that are not available. You will not be penalized in your HS course rigor due to the small class offerings at your HS.

I am an out of state student. My school does offer more AP classes but I will only be able to take those as a senior. Do they consider AP classes senior year for course rigor?
SDSU will not use your Senior grades in their GPA calculation but they will consider your course rigor. You will be at a slight disadvantage since your school does offer more AP courses and you will not get any extra honors points in the CSU GPA calculation if they are not taken 10-11th grade. However, you will be evaluated based on what your school does offer so take the most rigorous course load possible with the limitations you are given.
OOS HS Honors designated classes do not get the extra honors points in the GPA calculation but Duel enrollment classes do, so that might be something worth investigating.
Since you are OOS, make sure you meet the CSU a-g course requirements since your application will not be considered without them.
