Does taking courses from these sites in any way help the applicant in the college admissions process? What if the courses pertain to the planned major?

Additionally, if it does help, should one audit the courses or buy a certificate of completion?

No, except possibly showing interest in a subject.

I doubt the certificate of completion adds any value. I do know, however, that you can attach a url of the certificate to your Linkedin profile.
