I'm signed up for some classes on Coursera, but I'm not getting a verified certificate. These courses are to help me get a head start on physics and engineering, and I want to put them on my app, but will colleges even consider them as an EC if I don't have official proof of passing the class?

You can list it on your app to show interest. It won’t make a big difference imo.

Personally I would not use up space for real ECs to list that, but do list it if there is room. This is just something you are doing on your own time for your own benefit. Sure it indicates that you are doing something to expand your knowledge and shows your interest. But it is not an evaluated course as you know, so it can’t be considered like rigorous coursework–maybe you are learning something, maybe not. So what is the real value? Just like reading books and such. To me, it doesn’t compare to activity and contribution in your school and community. If this helps you in some other things that you do projects and research then great, list those things that are demonstrated.

@BrownParent Would I be better off listing them in “Additional Information”?
