courses versus AP's

I am a homeschooled eleventh grader, with two AP's (3 and 4), and one SAT II (800). I have taken two courses (A and B) at Harvard Extension, (both harvard instructors) If I really work hard, I can complete an Associates degree there in time for college admissions. However, that would rule out AP's; becuase the course doesn't usually fit the test, and doesn't even finish until late may, way after the tests are offerred! So my two other options are to either do a mix of courses and AP's (preferably in subjects that I had not taken a course in, or just do AP's.
Does anyone have any idea which of these three options would make admissions people the happiest?
thanks!

My S took Biology at the Extension School and also took the AP; it worked out fine, both in terms of schedling and in terms of course coverage. He did take another course (for which there is no AP anyway) that was held well past the AP exams.
