I am positive that I would like to major in political science and history as an undergrad before attending law school. Is it completely ridiculous to take only 2 years of science (Intro to Chemistry freshman year and Advanced Biology [a junior/senior course] as a sophomore) and replace the slot for science with political science and history courses junior and senior year? Will the Ivies frown down upon this or look at it as honing in on my passions and interests?

you are posting a ton of questions that you could easily research on your own. Look at some of the schools you are interested in and see what they say about science. In general, most top, top schools like to see three to four years of science, including Chemistry, Physics and Biology.

Each college has an admissions website with tons of information -- start by looking through some of these.
