I looked at the curriculum for CSE and CS and noticed they were only about 5 classes different, in fact, the first 5 quarters are the same. Which major should I choose? I'm guessing CSE because it also notifies employers that I know EE, however, maybe if I chose CS they'd think I'd be extremely specialized in CS. But who knows what they're thinking. So which one do you think is better to take?

Depends on how interested you are in circuits and EE. Straight CS lets you take more upper-division CS classes, so that’s a plus. CSE gives you more exposure to hardware, so that’s a plus.

I’m straight CS, in case you’re interested. I like being able to take the extra CS classes.

do employers like cs or cse?, I mean do they look at cse and say “yeah, he’s cse so he isn’t as good as that guy who’s advanced in cs” or say “cool, he also knows ee cause he has a cse, I’d hire him over that guy who’s only a cs”?

It doesn’t really matter. What matters is things like internships and actual software development skills that you obtain (in and out of class) throughout your time in college.
