Pace and BoCo both encourage the kids to audition outside of school, which is a pro or a con depending on your personal line of thought (I think it’s a pro). We see current students (e.g., not yet graduated) from Pace and BoCo get cast in professional things, including national tours, pretty frequently. Pace just had a junior in the Sound of Music tour; BoCo has a junior who is starting the Once tour, for example. Both have great networks/connections.
I think the biggest difference is in the feel (due to location) and the training. I don’t think you could go wrong with either one. Just so you know, NYC professionals come up to BoCo all the time, and the Boston area professional theatres cast BoCo students all the time, too. I saw a junior BoCo student in the Lyric Stage of Boston’s Sweeney Todd last year. (I have friends with kids at Pace and the same thing happens there…but I live outside of Boston so I actually see the BoCo kids more.)
