How difficult is the curriculum at IWU?, and what are the required set of core classes that every student must take?

The IWU curriculum could probably be best explained via their website, however all students are required to take a variety of general education requirements. Many of these can be fulfilled through your major, but you may have to take some classes you don't necessarily think you'll "like." However, I found (as general education is meant to do) that the classes definitely open your eyes to the world beyond IWU and beyond your own major. The classes are generally appealing and you'll get to meet a variety of students from other disciplines. If you don't pass out of foreign language requirement, you'll have to take some of those classes as well. Don't worry, though - everything will most likely fit into your four years!
As for level of difficulty, I guess it depends on what your major is and how hard you're used to working / willing to work. However, they don't call it the "Harvard of the Midwest" for nothing! You will be challenged and pushed to your limits, but you'll learn valuable lessons. No matter what, the profs are truly invested in your success. They all have office hours where their time is solely devoted to helping students and their doors are wide open. Heck, you can even just drop by for some advice or a chat about life!
