One of the very popular tips in college admissions is to demonstrate your interest in a college... Through the common app, you only write one essay which is viewed by all colleges on your list.

What confuses me is this: How can you demonstrate interest(through writing) in a specific college when all colleges will be evaluating the SAME essay?

Haha. Its easy: supplements. Generally (although not always) schools will have additional forms that you fill out that go only to that specific school. These forms may contain essays or short answer questions, which is where you can hint at your interest.

Also, remember that you can demonstrate interest in other ways at many colleges, such as by visiting, going to information sessions, emailing your regional representative, etc.
