Demonstrated Interest

So I've looked at all the schools I'm interested in and I noticed a lot of them factor in interest in their decision. I know there's the standard campus tour, information session, and applying early. I was just wondering if there were any other ways? One way I've heard is to email your admissions rep; does anyone have any suggestions on what to say to them to let them know you're interested in the school without sounding too desperate?
Any help would be greatly appreciated. Thank you!!

College fair, register on their website, call and ask for specific program literature, basically, get them to write down your name, and if they’re within reasonable range, reach out and say hi, whether that’s on campus, at your HS, or on a recruiting tour.
