I'm an undergrad that has been through the freshman AND transfer application process.

Freshman process: put your best foot forward showing what you've learned up until that point in your life

Transfer process: shows why you want to transfer and what didn't fit/how XYZ uni is the better choice

Grad school:??????????????

Do they care about EC's unrelated to your major?
What else should I look out for?
Conversely, how should I prepare the rest of my undergrad years?

BTW, I'm a geography major looking into social sciences (maybe MS geography again) for graduate school.

For grad school you apply to a particular department, not the school itself. Because of that, they tend not to care about ECs, your double majors, or your “well-roundedness.” They want someone who will excel at research and can show their passion is within their field of graduate study.

Do research as an undergrad, take grad classes in the department you’d like to go to grad school for, and keep up a high GPA.

RacinReaver hit the nail on the head. To add to that, letters of recommendations are extremely important for graduate admissions (or PhD programs, at least). You’ll probably need 3 of them, so make sure that at least 3 professors know you well.
