Do colleges know/care about senior year classes?

I'm taking at least three APs, three college courses, and two advanced/extracurricular regular courses senior year. Also, I am self studying two or three other APs, and direct studying one more AP class. Do colleges (top colleges) even care how jam-packed my senior year schedule is? Do they find out or do I have to tell them?

Btw, I'm not taking so many classes to make myself more "pleasing" to the adcoms, I just want to.

The colleges will know what your school report tells them.
If you self-study something (and it is not an official independent study course at your school) you will have to tell the colleges so that they know.

And what does my school report tell them? lol

Usually all your high school grades through junior year and the classes you signed up for senior year.
