My school is very small. I have around 60 people in my grade/class; We don't have very many teachers, and our course selection is very limited. Do colleges look at this? Will top colleges understand that my school only offers ONE AP course (rarely 2)?

I see all of these people who have taken so many AP courses, and I feel like I don't have as good a chance as they because they had more options.

Colleges will know that your school only offers one AP class. Admission officers, only want to know that you took advantage of all the course offerings that were opened to you.

Your guidance counselor should be reporting that you took the most rigorous schedule available or even provide a listing of the highest level course offered at the school. You can’t take what they don’t offer.

If you’re really interested you could self-study for AP exams or possible take classes online but it all depends on what kind of schools you’re shooting for.

Counselors generally send a “school profile” from that explains your school, course offerings, grading scale, etc although your school may be too small for that- in any case this is a great question to ask your guidance counselor.
