I'm currently applying to 8 or so grad schools in about 2-3 different programs. All pretty Computer Science related (MS in CS, information Systems, and Engineering Management). Do I need to ask my professor for multiple letters? Or can I just take 1 or 2 assuming they are catered to that program or are general and send copies of that.

Not asking if it's better to do that just if it's feasible to have one letter and send copies to the universities.

Yes, your professors can use the same letters for all programs. However, they should either submit those letters themselves, or send one letter to a credential service that will forward copies of their letters on their behalf.

Under no circumstance should the applicant handle the letters him/herself. Those letters would have zero credibility because (a) the applicant could have tempered with them, and (b) professors may not feel free to give their honest opinion if they know that the applicant has access to the letter.
