Let's say I'm applying to CAS. Does the major I choose to apply with affect my admissions?
E.x.: applying with bio as my major vs. econ

Basic answer: No

More detailed answer: That depends on your grades - if you have poor grades and SAT scores in math subjects compared to high scores in CR/W and good grades in English/History/etc. it won’t look good that you’re applying for say… Math or economics. But this is true of ALL universities, for EVERY program.

But it’s not like the university sees econ for say, and thinks "well, a lot of people applied saying “econ”… so maybe we’ll choose someone who chose bio since we have a smaller number of people who put down bio?

Nope, you’re admitted to the college of arts and sciences, not really a particular major.
