If I didn't take honors courses freshman year and only took one sophmore year, and then took on hon and one ap junior year + one ap online + 4 CC's + 3 UC summer courses, then took 5 AP's senior year, will this be okay? I'm freaking out about my rigor. Just because I didn't take the most rigorous offered but I took more rigorous, will I still have a shot at, say, Cornell, or am I SOL because I didn't plan out my high school career when I was five years old?

You still have a chance. Many schools don't even offer very many honors classes at the freshman level. The school I went to for my freshman and sophomore year, for example, only offered one honors class for freshman and two for sophomores. AP classes were for juniors and seniors.

However, it might be better to spread out your course load. Take another AP or two your junior year. Take a few more honors classes your sophomore year if they are available. The online and college classes will definitely help.

I can't. I'm a junior now

No. an increase in rigor is expected.
