Does Bowdoin have a LANGUAGE requirement?

…didn’t notice any mention of one in the catalog…

No, there is not one.

It was my understanding that certain majors, ie history, require language. don't know if AP Latin would fulfill such a requirement though, as my son received a 4, anyone know for sure?

Varies by major.

The school as a whole has a "2 humanities classes" requirement, which one may satisfy with a language.

To get most AP credits you're going to have to take a course anyway - AP just places you higher into the level. For instance, as a part of my bio major, I need physics 104. A 5 on the phyics exam simply allows me to take physics 105 to fulfil that req, plus I get +1 AP credit on my transcript assuming I get something like a B or better in 105.

history should not require a language for the major, unless they have recently changed their requirements.

Nope, but you do have to fulfill two "humanities and fine arts" requirements or something, and languages do count. I'm not sure which, if any (besides the languages, of course) require language for the major, but AP credits won't get you out of them--you'll place into a higher level and if you get a C or better, you'll get 2 credits out of taking the higher level instead of just the one, but you don't automatically get the AP credit.
