Does course/professor difficulty matter?

I'm currently at my state flagship University but considering a transfer to a Top 20ish university next year (my Sophomore year).

I was just wondering if course rigor takes any influence in the transfer admission process.

For example, I'm a Liberal Arts Major, but I'm taking a Biological Psychology course this semester for one of my science credits. A lot of people I know are taking more easy courses designed specifically for non-science majors for science credits, but I was looking for a more challenging/interesting course. However, this means I'm taking a much more difficult course than what I would imagine most Liberal Arts majors take, and might end up with a lower grade.

Likewise, last semester I took an Art History course with a notoriously difficult Professor who gave out something like 5% As/A-s and failed anywhere from 30-40% of the class. I'd imagine a lot of people consider Art History an easy course, and although I made an A-; I'm worried it might negatively effect me when looking at students with 4.0s.

Anyone have any idea, if these things would play a role in the transfer process?

Rigor of coursework is a factor considered along with your coarseload, gpa, school, etc.

Schools have no way of considering the difficulty of a specific prof.
