As seniors in high school are researching schools to apply to, we are all navigating our intended majors.
I am applying as a Sociology major with a second choice major in Linguistics.
I haven’t heard much about this, so I’m curious on whether or not the major a student applies as really can make a difference between them being accepted or denied?
In some circumstances it might, but it’s unlikely to make much of a difference in your case, as sociology and linguistics are rarely severely under-enrolled.
Seems like these majors are rarely severely over-enrolled, so it is unlikely that marking those majors will result in having to face a significantly higher admissions gate. But the OP may want to check each specific school if s/he really wants to know.

Though, I am a bit confused-- are you saying that sociology and linguistics are extremely common majors, or not so much?
