D23 could major in a non-science field and take science/math classes to satisfy medical school applications. In this case for RIT provide pre-med guidance and support so that she can coordinate science and major required classes?

I don’t have any personal insight for RIT but some of your questions may be answered here. In general, a student can major in anything of interest and add on the med school prerequisite classes.
