I was planning on applying to the Cornell College of Engineering Early Decision this year.

I was wondering whether selecting "Undecided" on the majors list could affect my chances of admission?

Is it bad, because it makes me look like I don't know what I want to do? Or does it help, if I've shown no specific extracurricular in a field?

Cornell does not make admissions decisions that way. All freshman engineering students are admitted without major. You do not choose a major until second semester sophomore year. On your application for admission you can indicate intended major (or not indicate one and thus be undecided) but that does affect the evaluation to determine admission.
